i can automatically tell what type of grill folks used for the bbq. the gas grilled food has lines and no smoky flavor. its like imitation grilled meat.
the charcoal grilled food is full of smoky flavor and burned just right. we use our weber charcoal grill for years and we have zero bbq leftover after our cookouts. its simply the better grill and the meat people love the most.

You can use wood chip on a gas grill and, along with seasoning, make some of the most flavorful meat ever.
Im a gas user, but prefer charcoal, gas is so much more instant, were as charcoal, needs preparation, and timing, and dies off to quick, with out chucking a load more on

Charcoal/Wood will always have more flavor too it period. Propane literally does nothing as far as taste to food. That is why it will always not be as tasty.
The red finish is because the charcoal grill is creating smoke, and that smoking process colours the meat red. I've had steaks done on a gas grill in the US that used "Lava Rocks" in it to give a better and smoky flavour, where the fat dripping smokes the meat. It worked really neatly. I've also had it where they used wood chips to also add a smoky flavour to gas grilled meats, which works too (although these were in different restaurants, and the lava rock one did better steaks). But then you can also add wood chips to a charcoal grill to get even more flavour to whatever you're cooking.
Just because they can tell which food was done on charcoal vs gas, doesn't mean a whole lot, especially when both your testers mentioned that all the food tasted similar and they liked both types. To make it a true level playing field, you should have used a digital thermometer to make sure the temps between both grills were as close as possible. Imo, temps and time are the biggest factors when it comes to properly grilled good tasting food.
The sausage casing in your test was a perfect example of that. I'm sure if the gas grill was a little bit hotter, the sausage casing would have been very similar to that of the charcoal cooked one, but you didn't use a digital thermometer, so you can't know for sure how big of a difference the grill temps were between each grill. These are the type of important details that will take your testing to the next level.

Charcoal is the crazy hot chick of grilling. Although enticing, is high maintenance, and can easily leave you burned. But PROPANE is the stabile girlfriend. Always there for you and always keeps an even temperature.

Not for one second do I believe charcoal adds flavor. If you are cooking over fully glowing orange coals, there is no way that it adds flavor. If your charcoal is not fully glowing then yeah, it adds flavor, a very nasty flavor. Nobody who uses charcoal starts cooking before the charcoal is ready unless they don't mind ruining whatever they are cooking. People who claim it does are like modern art lovers who convince themselves what they are looking at is actually appealing. Use your charcoal, enjoy the process I will never knock the process. I personally hate the process, but that's me. I use a pellet smoker because it's the smoke (incomplete combustion) that adds flavor and I can go do something else rather than baby sit a cooking apparatus.
I never cared for gas grilling. To me that's really no different than kookinh on a skillet… charcoal smells good and taste great. 👍
