A couple of wrongs here. If u have a vent u keep open u will avaporate liquid but then u need of course more liquid too the stew. Wine should u use allways use in a slowcooker and in the end u will reduce wine by simmering it, not need too add vegitable in a certain order. the temperture is equal in the whole pan

I hate slow cookers
I know someone that will put a piece of frozen meat too large to fit in the slow cooker with the lid, and with no liquid. It takes hours for the meat to thaw and I've often woke in the night to find the meat has shrunk but the lid is still propped open where it had been leaned up against the frozen meat. The next day when it's eaten, there are complaints by all of it being dry, tough, and the gristle being too hard. The cut of meat is always blamed. This scenario has repeated itself for over 50 years.
