Beef short ribs are absolutely not an inexpensive cut of meat. I also have heard chefs say that skirt steak is an inexpensive cut of meat. I don’t know where these people live, but here in Jersey, skirt steak is extremely expensive for the amount you get. Definitely delicious, but not inexpensive by any means 😅!!
