What I Eat in a Day as a Vegan
As a vegan, I strive to eat a balanced and nutritious diet that is free from animal products. Eating vegan can be a challenge, but with a little creativity and planning, it can be easy to create delicious and nutritious meals. Here is a look at what I eat in a day as a vegan.
For breakfast, I usually have a smoothie. I like to blend together frozen bananas, almond milk, spinach, and a scoop of vegan protein powder. This smoothie is packed with nutrients and gives me the energy I need to start my day.
If I’m feeling like something a bit more substantial, I’ll make a vegan breakfast burrito. I’ll start by sautéing some onions, peppers, and mushrooms in a pan. Then I’ll add in some cooked black beans and season with cumin, chili powder, and garlic powder. I’ll wrap the mixture in a whole wheat tortilla and top with some vegan cheese and salsa.
For lunch, I like to make a big salad. I’ll start with a base of greens like spinach or kale and then add in some chopped vegetables like tomatoes, cucumbers, and bell peppers. I’ll top the salad with some cooked quinoa, chickpeas, and a drizzle of olive oil and balsamic vinegar.
If I’m feeling like something a bit heartier, I’ll make a vegan wrap. I’ll start by spreading some hummus on a whole wheat wrap and then adding in some cooked lentils, roasted vegetables, and a sprinkle of vegan cheese. I’ll wrap it up and enjoy.
For a snack, I like to have some fruit or a handful of nuts. Apples, oranges, and bananas are some of my favorites. I also like to make my own trail mix with nuts, seeds, and dried fruit.
For dinner, I like to make a vegan stir-fry. I’ll start by sautéing some onions, garlic, and ginger in a pan. Then I’ll add in some chopped vegetables like broccoli, carrots, and bell peppers. I’ll season with some soy sauce and sesame oil and then add in some cooked brown rice. I’ll top the stir-fry with some toasted sesame seeds and enjoy.
For dessert, I like to make a vegan banana bread. I’ll start by mashing up some ripe bananas and then adding in some almond butter, almond milk, and maple syrup. I’ll mix in some whole wheat flour, baking powder, and cinnamon and then bake in the oven.

Thank you ❤
Everything looks so, so good! Btw, I've had the same issue with certain vegan white chocolate chips! No matter how little I add or how low a temp I bake they always turn into oil and sugar that absorbs into the baked good making it crunchy and odd. I finally realized the white chocolate chips that don't do this have emulsifiers in them (like sunflower or soy lecithin) and that was a game changer for me.
looking vibrant <3
love the hair situation in this video it suits you so well
Thank you for this lovely, cozy and heartwarming video <3
Love this hair colour on you!! And all the recipes of course, always a joy <3
Hope you have a beautiful week as well! Thank you Amanda.
Since I saw in your videos the trick of mixing the oil with the spices first and then mixing through the pumpkin or potatoes I always use it and it is a game changer!! 🔥 beautiful video, as always. Hope you have a nice week 🤍
Loved it, thank you so much for the inspiration 🥰💫 lovely greetings from austria ~
Definitely will be making that soup!
I love your videos!!
Cold weather in Syd is making me want to try a hot cacao too. Is there a specific drinking cacao or can I prepare one with regular cacao powder? How does the expert recommend?! ☺️
you look so radiant and beautiful in this video! wishing you all the best, thank you for brightening my days x
Great video, wonderful Ducky!!! ❤️ Loved the greeting from Eva!!! 🐱 Please give her a pat and cuddle from me!!!
I think electric mixing the flour component wouldn’t have helped as it makes the flour too gluteny as it overmixes it! Next time just electric blend sugars, flax egg, vanilla & butter & then mix until just combined with the flour just using a wooden spoon
You should keep the skin from the pumpkin!! Add some oil and cinnamon then pop in the air fryer! They are like little sweet chips! Can add maple syrup too 😍
Another fantastic video as always Amanda. Love 🥰 Amanda's what she ate in a day video's. Love 💕 Amanda.
"Arugula" in Canada as well, but "Roquette" in Quebec (French).

Gorgeous video as always ❤️ thank you so much for all the effort you put in. Your channel is honestly the most comforting and lovely space 🥰🙏
You can never have too many chocolate chips 😂
The lunch bowl looks amazing – I always am at a loss what to use as a dressing and end up using vinegar.
I've been waiting everyday for the video to be uploaded! I'm very happy Take care🌷🐇🎉❤🎉😊🎉😊❤
