Easy Instant Pot Pot Roast (Tender and Juicy)

Ingredients

To make a delicious pot roast in the Instant Pot, you will need the following ingredients:

– 2-3 lbs of beef chuck roast

– 2 cloves of garlic, minced
– 2 cups of beef broth
– 2 tablespoons of Worcestershire sauce

– 2 tablespoons of Italian seasoning
– 1 teaspoon of salt
– 1 teaspoon of black pepper
– 2 bay leaves
– 2 carrots, peeled and cut into 1-inch pieces
– 2 potatoes, peeled and cut into 1-inch pieces

Instructions

1. Turn the Instant Pot to the “saute” setting and add the olive oil.

2. Once the oil is hot, add the beef chuck roast and brown on all sides.

3. Add the onion and garlic and saute for 2-3 minutes.

4. Add the beef broth, Worcestershire sauce, tomato paste, Italian seasoning, salt, pepper, and bay leaves.

5. Place the lid on the Instant Pot and set the valve to “sealing”.

6. Cook on high pressure for 45 minutes.

7. Once the cooking time is up, allow the pressure to release naturally for 10 minutes.

8. Quick release the remaining pressure and open the lid.

9. Add the carrots and potatoes and stir to combine.

10. Place the lid back on the Instant Pot and set the valve to “sealing”.

11. Cook on high pressure for an additional 10 minutes.

12. Once the cooking time is up, allow the pressure to release naturally for 10 minutes.

13. Quick release the remaining pressure and open the lid.

14. Serve the pot roast with the vegetables and enjoy!
