My aunts keeps adding wheat flour to my foods and when she see me okay after eating she tells people "see? It's all in her head"
She has type 2 diabetes so I thought she would understand me since whenever she eats cake she has to inject insulin.
I am close to her daughter and I just am so angry that she gluten posioned me and that I have to prove I have celiac.
Many different GI's told to just stay away from gluten and that there's no cure. I dont necessarily need a biopsy, only if I want to.

The bread my great grandparents ate is a lot different then the commercial mass produced loaves sold today (!) After removing and re-introducing certain allergen known foods over several months with lab work conducted, removing food with gluten has consistently and measurably reduced my inflammation markers, I also feel a lot better. Over generations, gluten food items have become so processed that they barely look like the bread of our ancestors. I think that is why more people are experiencing positive effects of going gluten free.
One thing I didn't see that I am curious about is whether it is more common now for people to have gluten sensitivities than decades ago when I was growing up, or if you just didn't hear about it because they didn't understand the condition. And if it is more common now than it used to be, why is that? I'm thinking it is more that they didn't understand because I don't remember doctors talking about diet much when I was growing up, except that you needed 3 Square meals a day.

It took a extremely restrictive diet with slow reentry of food to find out I had a gluten intolerance. And I fill 100 times better not eating it. I truly didn't realize how much it effected me till I didn't eat it so I don't discredit anyone that says they have it. I just hope one day I'll know why it bothers me so.

The only issue I have with people who have neither celiac disease, gluten allergy nor wheat intolerance, who just go gluten free because it's trendy, is that restaurants and cafés will take glutenfree orders less seriously. I went to a course about glutenfree food and celiac disease at the hospital when I first got my diagnosis, and we were advised to mention specifically that we have celiac disease to waitresses because they might not take the glutenfree order seriously if we don't.

I lived for a year on the east side of Victoria, BC on the way to Oak Bay. there was a bakery in a small mall (not high overhead) and it was all "gluten free" . So what does "gluten free" have to do with PRICES being another 40 to 50% higher than even the so -called "organic" bakeries??
